What is Garden Egg?

Before diving into the recipe, it’s essential to know what garden eggs are. Garden eggs, also known as African eggplants, are small, white, or light green egg-shaped vegetables. They have a slightly bitter taste, which adds a unique flavour to dishes. These nutrient-packed veggies are rich in fibre, vitamins, and minerals, making them a healthy addition to any meal.

Ingredients You’ll Need

To prepare garden egg sauce, gather the following ingredients:

  • 6-8 garden eggs
  • 2 medium onions, chopped
  • 2-3 cloves of garlic, minced
  • 2 fresh tomatoes, chopped
  • 1 red bell pepper, chopped
  • 2 scotch bonnet peppers (optional, for heat)
  • 1/4 cup palm oil (or vegetable oil)
  • 1 teaspoon ground crayfish (optional)
  • 1-2 bouillon cubes (Maggi or Knorr)
  • Salt and pepper to taste
  • Fresh basil or scent leaves for garnish
  • Step-by-Step Recipe

Prepare the Garden Eggs

Wash the garden eggs thoroughly and place them in a pot of boiling water.
Cook for about 10-15 minutes or until they are soft.
Drain the water and allow the garden eggs to cool slightly.
Peel off the skin and mash the flesh using a fork or potato masher until smooth.
Create the Sauce Base

In a large saucepan, heat the palm oil over medium heat until hot.
Add the chopped onions and garlic, sautéing until they become translucent and fragrant.
Stir in the chopped tomatoes, red bell pepper, and scotch bonnet peppers. Cook until the vegetables are tender and the tomatoes begin to break down.
Combine Ingredients

Add the mashed garden eggs to the saucepan, stirring well to combine with the sautéed vegetables.
Sprinkle in the ground crayfish, if using, and crumble the bouillon cubes into the mixture.
Season with salt and pepper to taste.
Simmer to Perfection

Reduce the heat to low and let the sauce simmer for about 10-15 minutes, allowing the flavours to meld together.
